*BANANA NUT BREAD*

WHAT U WILL NEED:


1/2 STICK OF BUTTER, SOFTENED
1 1/3 CUP SUGAR
2 EGGS
1 TSP. VANILLA
2 CUPS PLAIN FLOUR
1 TSP. BAKING POWDER
1 TSP. BAKING SODA
3/4 TSP. SALT
1 CUP (8 OZ) SOUR CREAM
1 CUP MASHED BANANAS (2 LARGE)
1/2 CUPS OF NUTS (CHOPPED)

PREHEAT OVEN TO 325.

SPRAY YOUR LOAF PAN AND SPRINKLE WITH FLOUR.

SIFT TOGETHER FLOUR, BAKING POWDER, SODA, AND SALT.

BEAT BUTTER AND SUGAR IN BOWL UNTIL FLUFFY.

BEAT IN EGGS.

ADD VANILLA.

MEASURE OUT YOUR SOUR CREAM. 

ADD FLOUR MIX AND SOUR CREAM.
ALTERNATING!! UNTIL BLENDED.

 ADD FLOUR AND MIX WELL THEN....

ADD SOUR CREAM MIX WELL. 

MASH UP YOUR BANANAS IN A SEPARATE BOWL. 

ADD MASH BANANAS AND NUTS.

THIS IS HOW IT SHOULD LOOK!!

ADD TO YOUR LOAF PAN.

BAKE FOR AN HOUR.

MMMMMMM ENJOY!!!!

*CAKE POPS*


*CAKE POPS*

WHAT U WILL NEED:

1 (14.25 OZ) BOX CAKE MIX, ANY FLAVOR
1(16 OZ) TUB OF FROSTING, ANY FLAVOR
1(24 OZ) PACKAGE OF ALMOND BARK OR CANDY COATING
SPRINKLES, LOLLIPOP STICKS OR SKEWERS (LIKE I USED), 3” X 4” CELLO BAGS, RIBBON OR TWISTY TIES (BREAD TIES), STYROFOAM BLOCK

Nevaeh helped bake the cake. 



Bake cake as directed on the box.



While cake is baking I cut up the skewer sticks to lollipop size. 


Once its cooled, crumble the cake in a large bowl,


and stir in half the frosting container.
 I used homemade cream cheese frosting I had leftover.


Mix with your hand till its thoroughly combined and thick like a truffle center.
Mix in more frosting if needed.



Bout like this.


I used a tablespoon to make sure i had even balls. 


Roll mixture into 1 inch balls. Place in a container or cookie sheet lined with wax paper.  Pop in the fridge for an hour or overnight. 


While the cake balls are in the fridge I chopped up my almond bark.


Like this.


Microwaved as directed on package. Till it looks like this. Dip the tip of stick in the chocolate.


Insert it into the ball halfway. 


Do them all. 


Carefully dip the balls in the chocolate and rotate till coated.


Then gently tap the excess off.
.  If you do it too hard the ball will fall off.  Immediately cover with sprinkles before the chocolate has a chance to set. Then insert in the Styrofoam block to harden.


I did different color sprinkles and....

Rainbow Cake

For the past 6 months i have really got into making cakes for everybody in my family on their birthdays. When it was time for my lil 4 year olds birthday i wanted to make her a Rainbow Cake. So i searched the web for different recipes~ i came across Martha Stewart's one, i read a lot of the reviews on it and i can say maybe 75% of them were not good. So i wasn't to sure about doin this recipe. I searched some more and there was a box cake recipe, i dont do box cakes at all~ but this recipe had the homemade cream cheese frosting. i just fell in love with the recipe. It was perfect! Here it is... but listen it makes way more then whatcha need for the cake.
  • 4 packages of cream cheese 8 0z.
  • 1 cup of butter ( 2 sticks of salted cream butter)
  • 1 Tablespoon of pure vanilla extract
  • 5-6 cups of powdered sugar

mix the softened, room temperature cream cheese and butter ( i put them in a microwave safe bowl and microwaved it for 30 sec.) mix until creamy. Add vanilla and mix well. Slowly add the sugar mixing in well. then taste it after u add your 5th cup and see if its to your liking. 6 cups is really sweet i only used 5 cups and its delicious!!
So after u make the frosting pop it in the fridge while u start to prepare the cake. Everything u need to make the cake is....
  • vegetable shortening
  • 3 cups all-purpose flour
  • 4 teaspoons of baking powder
  • 1/2 teaspoon salt
  • 2 sticks of unsalted butter(1 cup) at room temperature
  • 2 1/3 cups of sugar
  • 5 large egg whites, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups milk, room temperature
red,,yellow,blue,green,food coloring
Preheat oven to 350 degrees. Brush six 9-inch round cake pans with shortening (i only had 2 and reused them)  and line each with parchment paper. 

I set my cake pan on the paper and cut around it the best i could. Then used that one as a guide for all the rest. You will need 6 round piece of parchment paper for each layer.
So I used a paper towel and got a bit of shortening on it and rubbed it around in the pan, then u rubbed both sides of the parchment paper with it as well. 

In a large bowl mix together your flour,baking powder,and salt: set aside.

In a bowl with an electric mixer , cream together your butter thats at room temperature, with your sugar. The recipe i looked up had for me to use a paddle attachment but i just used my electric hand held mixer. Thats all i have. So that works just as good.
Slowly add in egg whites that have been getting at room temperature~
Mix until well combined. Add vanilla and mix until fully incorporated.
Add flour mixture and milk in two alternating additions, beginning with the flour and ending with the milk. Mix until well combined! 
Divide the batter into 6 bowls~ i used a 1 1/4 cups of batter in each bowl~ it turned out just even.
Make sure u have 6 of the same bowls it seemed easier to me that way.
For the colors i used Betty Crocker gel food coloring.
Lets start with purple. U need to use red and blue to make purple~ here is the red.

Keep going with the colors u want. I'm doin all the colors of the Rainbow~
Purple
Blue 
Green
Yellow
Orange
Red 

Now lets get these cakes in the 9 inch round bake pans lined with parchment paper. I started with Purple and Blue cause i only had 2 pans.  Use a spatula to even out the cake. I also banged it against a flat surface to get air bubbles out and level it some.
The recipe i went by said to bake for 15 min. but that was too long~ it browned the edges~ so after i baked the purple and blue for 15 min. and got upset i just baked the rest of them for 11 min. They turned out fine~ toothpick check to make sure~ ovens are different! Leave the parchment paper on the bottoms of the cake while u let them cool. i let them cool for 30 min. i had to run to the store anyways~ that took me 30 min. ! Came back and then started to frost.

Start with PURPLE as the bottom layer, add some frosting. Then BLUE, add some frosting, next the green layer and again add some frosting!

 Add a as much of frosting between the layers as u want~ i just did it as i went. No measurements!
Now the last layer, is play time! i kept adding more and more till it coved it all!

Finally! I dont have much skills in cake decorating~ i just left mine plain white~

Now this is all thats left after the party~ everyone like it~ it tasted soo good too~ not too sweet and not too plain!
Now thats a pretty cake!!
